Hi Mary,
I think your spacing shall work out just fine, you'll have adequate
space for air flow and it will be easy to harvest the plants. Perhaps
you could add some very low growing marigolds, such as any of the "gem'
series and a low growing basil, like "thai lemon" in the alternating
empty spaces. This would still give you plenty of room for harvesting
and provide something for both the palate and eye.
Marigolds are a traditional companion plant for tomatoes, their roots
are beneficial and basil is simply delicious with tomatoes IMHO. I make
a simple salad with sliced tomatoes, whole leaves of basil, sliced fresh
mozzarella and a vinaigrette of olive oil and lemon juice, season it
with salt and pepper and maybe a bit of minced red onion.........yumma
in the tumma.
