I think that depend on the substance you have on the ground between the beds.
If you leave grass there, make sure you have room to run a lawnmower easily
between the beds, if you use mulch or stone its not a problem, I would
suggest three feet at least, four is better. Thats comfortable for me. If
you plan to push a wheelbarrow or garden cart between them, leave yourself
room to maneuver. I am sure that the pH can change, based on the amendments
and what the different plants take out of the soil. Thats an interesting
question, perhaps a pH meter (many seed catalogs sell them inexpensively )
can help you keep track and deal with the changes as needed. Just my opinion,
I am sure there are many good ways to do this and your needs and space will
ultimately dictate whats best for you....
