Lemon grass too big for a square?

Does lemon grass get too big for a square?  Does one lemon grass
produce just one lemon grass, ie what is the growth like?? (does that
make any sense?)  
I just went to the Thai Market & bot 3 stalks of lemon grass.  Is the
procedure, to cut off the dry outside leaves, cut off the bottoms, &
put them in a glass of water to root?  Then plant them.  Spacing?  How
big do they get?  TIA, Judy (zone 7)
