One herb? That would be tough....
Cilantro is a great start...re-seed throughout the growing season to ensure
a steady crop. This is great with tomatoes, peppers and green onions for
salsa, or any mexican cuisine.
Parsley, both the flat leave and curley leaved varieties is way up there.
Not only is it great for humans, and terrific in tabouhli (spelling) but is
a favorite of butterly (swallowtail) larva. Parsley is not the easiest to
start this time of year, but a great self-sowing bi-anual once established.
There is no substitute for fresh basil! Pesto, italian sauces..or just a
little with a fresh tomato salad...Great stuff! Great companion plant for
tomatoes too!
One of my personal farvorites must be salad burnett...also a bi-anual, but
a great self sower.
Then of course there's Rosemary, (tender perennial) for Rememberance, and
there's always time for thyme, any thyme!...and no herb garden can be
complete without the graceful foilage of sage, and chives and majaram, and
...
Bet ya can't stop with just one!!
