Lisa, I grow parsley as a beautiful border plant around a bed.  Peppers
(I've only done the hot ones before this year) are nice, uniform, pretty
and look great when they're bearing.  I'm moving a big sage to replace a
dying azalea (sp) in the front yard.  I've stuck some squares of parsnip
and salsify in corners here and there (partly to test different areas of
my soil and micro-climates, partly because I just got carried away one
day).  

I've read/seen pictures that also look good - lettuce as a boarder,
chard as a striking "bush" - especially a Charlotte chard.  

This is a great question - I'm anxious to see what others have to say.
