I use them just like I would zucchini, though in my opinion they're much
better than zucchini. They don't get all watery and mushy, but stay
nice and crisp tender w/ a mild almost buttery flavor. I've cubed them
and put them on pizza, pasta sauce, just plain as a side dish, chilled
as part of a salad, in veggie soup. I'd roast them in the oven, steamed
them, microwaved them and stir fried them. All ways are tasty. My
favorite way of eating veggies in general is roasting them in the oven.
To do this, spray a shallow baking sheet or pan with a non-stick spray.
Preheat oven to 450 degrees. Put uniformly cut veggie chunks in pan and
lightly spray the veggies with the spray. Add garlic, salt, pepper &
any other seasoning combination. Put in oven on middle rack. Cook
until tender. Veggies get nicely browned this way and have a wonderful
roasted flavor. I've cooked asaparagus, onions, carrots, broccoli,
mushrooms this way. I'm sure squash would be good this way too. Times
in oven vary according to type of veggies (ie. asparagus is 8 minutes).
Stir half way through cooking.
