Dill questions

I have a couple of dill plants in full flower just now,
and would like some suggestions on the best way to
preserve the leaves (or should I say, the dill weed?)
One of my herb books doesn't suggest hang drying for
dill.

After I gather the dill seed, will the plant flower
again, or should I pull out the plant and replant the
squares with something else? (All I know is that dill
is an annual, and this is the first year I've grown
it.)

The dill crock suggested in one of Euell Gibbon's books
sounds delicious, and I'd like to give it a try next year.
(I don't have enough dill this year.) Has anyone made a 
dill crock successfully? If so, can you explain how, and 
what vegetables you used in it other than small cucumbers?
