They say lime, humus and potash will sweeten your carrots.  Too much
nitrogen also damages the flavor.  Try interplanting with onions, leeks,
rosemary or sage to repel carrot fly (Psila rosae).  They are also
compatible with leaf lettuce and tomatoes but dislike dill.  Carrots
planted with your peas help the peas.  Don't store carrots with apples
or you could get bitter carrots!  Good luck
