Hi Mary,
I compost all the woody vegetable wastes, including the ones you mention and
also okra, old brussel sprout stalks, and so on. I also compost wood chips,
too!
It all breaks down in the fullness of time; however, when I need some fine
compost, I can generally get it by sifting the material through a quarter
inch screen, so anything that is taking the slow road to humus-ville can be
screened out.
