Square Foot Gardening List - http://www.flinet.com/~gallus/sqft.html

Hi Mary and Jean the Herblady

One thing that worked well for us is that if the basil leaves are
still green, make pesto in ice cube trays, freeze them, then break the
pesto cubes out and store them in a ziploc in the freezer. We are
still using up the last batch we made fall of 1997!

Can you pluck the leaves off the basil?? If so, and they have not wilted too
much, dry them and use them throughout the winter - if the leaves are not
too big (unless you have the large leaf variety) and they are still scented
- dry them and put them in a canning jar. I use the microwave (I know a lot
say NO to the microwave, but the weather here is too humid to air dry) - I
layer between two paper towels and use 10% power for 10 seconds and then
flip the towels over. They turn black, but they still scent the spaghetti
sauces and stews throughout the winter!!!
