Rhubarb

This was the first year I grew rhubarb from some plants I dug from my aunt's 
garden in May.  The stalks never turned completely red, in fact, they were 
mostly green.  There was great leaf growth.  Perhaps the shade from the 
leaves prevented the red from forming?  Anyway, I was afraid to use them.  
Also, can these stems be harvested anytime or only in spring?
