Don't worry that they were green.  That has nothing to do with oxalix acid. 
There is a lot of variation in color in different rhubarb varieties.  If you
grow seed of "Victoria", for example, you may get fully red, partly red, or
nearly solid green stalks.  Some of the best rhubarb I ever ate was a green
stalked variety, in Scotland. Color of the stalks is strictly a function of
the variety and has little to do with shade.
