hey gang..

we are long time fried green tomato fans.  our basic recipe is to slice the
toms 1/8 inch thick, dip in egg wash (eggs w/milk..or i use just egg
whites--cholestoral issues).  then dredge them once in a mixture of 2/3
flour, 1/3 corn meal, garlic seasoning (if you use garlic salt, don't add
extra salt), ground black pepper, cheyenne pepper or even crushed red pepper
flakes, onion powder and salt (seasoning amount to your liking..we like them
spicey.  let them stand on a plate for a few minutes and dredge again before
pan frying on med heat in olive oil.  because of the corn meal, you must
wipe out your pan after each batch.  *a personal trick i've learned...take a
section of your newspaper, lay it out in one side of your sink, or in your
trash can if handy.  then take a few more sheets and bunch them up and place
in the middle.  this is where i dump the greasy mess after each batch.  when
done, just wrap up the outside newspaper and discard.  works wonderfully!

I just put the sliced ones in bread crumbs (usually the It. spiced
variety from the grocery, with added parmesan) & fry them in olive
oil.  You can also brush them with oo, season & put under broiler.  A
friend just told me that she flours them, fries in butter, drains
them; adds more butter to the pan & makes a roux with flour, then
makes a gravy (cream sauce) with milk.  She swears by this way of
doing them.  I'll have to try!
