We did potatoes by using a 2ft x 2ft area and 2 plants at the opposing
corners:

l_________l_________l We placed the sprouting potato just at
the soil level and covered with a 3inch thick layer of mulch. When the plant
was @8inches tall..we then used rose collars(2 connected to make a circle @1
1/2 ft diameter) to surround each plant. Then as the plants grew I filled in
the collars with shredded bark mulch(leaving at least 3-4inches of the plant
exposed). When it reached the top..I added another collar and more mulch.
When this second level was reached I just let the plant grow. After the plant
dies back just open the collars..push out the mulch and the potatoes will
tumble loose...We got @ 12 potatoes from each plant.
