Brussel Sprout Help Please

First off, sorry I haven't been keeping up with the list. I missed you guys and your wisdom. Now that harvvest is upon me in Central Michigan I once again need help. LOL. 
I followed the advice of lopping off the top of my brussel sprout plants to aid the developing buds but now they are absolutely HUGE! They bare no resemblance to the ones purchased in the store. Is there a technique I am missing to form heads? Right now they look like loose leaf bunches all over the stalks.
