You're right, the smell is wonderful. You can enjoy eating them
immediately, or boil them with a lot of salt for a couple of hours, or dry
them and parch them in the oven. You can also dry them and use them in
recipes such as peanut brittle.
Boiled peanuts are my favorite, and this can only be done when they're
fresh, so it's a once a year treat.
