Walter,
I think the color change is very likely caused by
temperature. In hot weather the pale colored iris seem to bleach almost
immediately. I especially notice this in the fall with rebloomers, which
seem darker and more vibrant in the cooler weather.
As far as growing in pots, the fertilizer rating is not as important
as the type. I can only recommend a pelleted slow release type such as
Osmocote. Otherwise the Nitrogen being very soluble and mobile in the soil
will drain out in no time. Organic fertilizers are also a waste in pots
since there is rarely enough microbial action to break them down into the
usable nutrients, plus they are overpriced.
