Pineappling is thought to be the result of a damaged meristem (the growth
point of a stem). It is a mutation of that part of the plant but not the
main rhizome. A "Witches Broom" at the top of a pine tree is the same
effect. (Some have made cuttings of these to grow miniature pine trees).

To my knowledge it is not a virus problem. ( but I do not know of a
definitive study.)

I would cut off only the mutated bloom stalks and leave as many of the fan
leaves as possible to provide food for the rhizome to increase.
