I usually harvest all of mine while they are still green to make sure I don't miss any. They finish ripening on the window sill, lying on paper plates, no food. Mike Sutton posted several years ago that they harvest all their pods still green, stand them in buckets (pretty sure he said dry), let them finish ripening in a shed.

2008 - The most amazing pod experience here was with one that I accidentally bumped into 5 days (yes, days!) after pollination, broke it off about a quarter of an inch below the pod. I left it on a sunny window (on a paper plate, no water/food); it stayed green for the usual length of time, didn't rot, seeds looked normal, seeds germinated normally.

The pod parent was an IMM X AMITY ESTATE seedling, very healthy. Pollen parent Imm X CSONG, also very healthy. Might not work as well for a weaker plant. And as Chuck points out, timing might be different, depending on weather/climate.

Ugly babies, but interesting experience.
