Seed pod question

Hello;
I'm new to this list and look forward to learning more about my bearded
iris here in the central Oregon desert at 2700 ft. above sea level.
Iris is about the only thing I can grow that deer will leave alone!
Last year I had only marginal flowers and NO seed pods. This year my blooms
were exceptional and I see many healthy looking pods, which I enjoy
collecting to cultivate more plants from.
What determines a good year for seed pods to form? I noticed that other
iris beds where I collected seed in years past have no pods this year?
I am curious if iris are available that have orange or red flowers? I see
the root beer colored browns, but would like to find a brilliant color to
add to my purples and yellows.
