The Chinese harvest these old daylily buds, string
them on thread and dry them. They are called 'golden
needles'. They can be used like okra to thicken soups
and stews. Not the okra flavor, of course. I don't
know of other uses for them but feel there must be
some. The small spring shoots taste like lettuce and
are fine in salads. The unopened but mature buds
should be stir-fried or dipped in batter and deep
fried. (You might could deep-fry the open blooms, too,
like squash blossoms.) Probably could steam or boil
the buds like green beans. The whole plant is edible,
even the little lumpy things on the roots and you
won't starve if you grow lots of daylilies!

season.
