I've read British pop fiction in which characters used "flipping" as an adjective, meaning something like "silly", or "stupid", or some such connotation. That's how I took it in Catherine's message, indicating that Iris growing was much more than a "flipping hobby", her response being of humorous intent to indicate how serious iris growing is. Addictive, after all! :-)
