I find I can grow Japanese irises in pots setting in water throughout the
year, including the winter. Mine freeze solid at various times, but it
does not seem to bother them.
The prevailing wisdom, I think, is that JIs should be removed from water
during the winter. I believe this is not necessary in the south, probably
in Zone 7 southward. I also grow some Siberians in trays of water, and
they've never suffered as far as I can recall.
