Cut Flowers

We had a 15 deg F freeze here in Dallas a week or so ago.
At that time I had several irises that already had bloom
stalks up about a foot. They were nowhere near blooming, so
I left them on the plants and lost them all. If I had cut
them and put them in water in the house, would they have
bloomed? How developed does a bloom stalk have to be in
order to have it bloom inside?
