I've seen deer clear a twelve foot fence and cover a distance of at least 25
feet in the same jump.  I should note that that was with a dog in hot
pursuit and I'm sure it's not something that they would ordinarily choose to
do.  The more desperate they get the bigger the chances they will take.  In
many places they're overpopulated, near starvation much of the time, and
willing to do almost anything.  I've heard stories of deer just pushing over
an electrified fence getting seriously shocked the whole time.  So what will
work and what won't depends on where you are.  If the pressure is anything
but very light, the only things that will continue to work are fences and
sprays.

battling these creatures (I live in a clearing in the woods).  There is also
a rather long page with lists of feeding preferrences.  I'd be interested in
gathering comments and experiences.

Has anyone ever tried the Japanese method of deer control called Shishi
Odoshi?  It involves using running water and a teeter totter piece of
bamboo.  It could be quite interesting as part of a Japanese Iris garden.
