Moles eat earth worms, and most importantly beetle grubs. I have them in my
lawn, and consider them a valuable part of the ecosystem. I do not believe
they have an appetite for iris rhizomes, so if they are being eaten,  you
probably have something else. Mole tunnels heave up the surface of the
ground, rats actually tunnel through the ground and munch on all kinds of
root food. Is it what you consider to be unsightly, or are you actually
getting rhizome damage?
Our Eastern Mole is almost the size of a rat, 6 inches or so, with the most
beautiful soft fur. The cat occasionally sees one at work and digs him out
of the tunnel, then plays it to death. They apparently do not taste good to
cats. If you actually see one digging, you can pop it out of the ground with
a shovel, and if the cat sees how it's done once you will have a trained
mole killer.
However I personally think moles do far more damage in the intelligence
community than they do to my lawn.
