The idea is that the water on the surface of the plants would freeze,
absorbing cold from the air and keeping it from getting to the plants.
I know "absorbing cold" is not proper technical terminology, but it
sounds better than "releasing latent heat of crystalization."
One additional thing in favor of the proposed method is that pure water
will freeze at a higher temperature than the electrolite-filled sap,
cytoplasm, etc. in the plants.
