New to iris growing

I am not new to gardening but am new to Growing iris's and have a few 
questions...

I need to thin out my iris's which my mother in law wants what I will 
have left over after thinning. How do I go about thinning she will 
have beautiful iris's next year?

Also I know I should let the foliage die back inorder to have nice 
blooms next year but is there something besides annuals you can put 
with iris's that blooms later and will not interfere with the iris's 
growth?
