Tom,

Yes.  The issue is that you are trimming back the roots (by virtue of
digging them up plus whatever other trimming you do) and so should trim the
fans as well so the plant doesn't loose so much moisture until the new root
growth gets established.

Now if you transplant the iris as a complete root ball, you could trim the
fans less.
