Uh oh, did I miss something here? Are you saying that some oil soluble
pigments will be extracted with the alcohol?
I thought you had said that carotenoids were <not> extracted with
alcohol.
I'll get this straight eventually - is this right?
1) extract with alcohol - removes all pigments except lycopene. If
lycopene is present, the petal tissue will look pink.
2) add oil to the alcohol extraction - carotene? others? will move to
the oil, leaving xanthophylls and anthocyanins in the alcohol.
If I put a drop of each type of extraction on a piece of blotter paper,
will the different pigments move different distances leaving different
colored bands? Will the xanthophills move a different distance than the
anthocyanins? Will the different anthocyanins separate out?
<For those doing pigment extraction, remember that an alcohol extraction
will include all the iris pigments except lycopene. To separate the
water based pigments from the oil based pigments, you need to add some
oil to the pigment extraction and shake well, and then let it settle.
The water based pigments remain in the alcohol and the oil based
pigments move to the oil.
