   Depends on where you live.  My dictionary shows stalk as a definition of stock
and my grandmother's THE NEW GARDEN ENCYCLOPEDIA published in 1942
and still considered to be the 'bible' on gardening in this household 
also shows stalk as a definition for stock.

   In Texas I grew cleMATis.  In Mississippi I have learned to grow 
CLEMatis and just go with the flow from the Texas 'tank' to the 
Mississippi 'pond.'

   I do think stock for stalk is more British English and that 
includes Canadian and Australian English.

   You can do a search on 'stock'' in the archives and find it used 
many times to mean stalk.
