>From Webster's New Collegiate Dictionary--
Stalk: 1a: the main stem of an herbaceous plant often with its dependent
parts b: a part of a plant that supports another 2: a slender, upright
object or supporting or connecting part.
Stock: 1a: Stump b (archaic) a block or log of wood c: something without
life or consciousness, or a dull, stupid or lifeless person 2: a supporting
framework or structure [many other secondary definitions deleted here], 3
The main stem of a plant, as in rootstock; trunk. There follow 13
additional levels of definition, but none of them would be considered an
appropriate description of the blooming stem of an iris plant.
So STALK is the appropriate word and "stock" is not. Using "stock" for the
blooming stem of an iris is NOT a mistake in spelling, but a mistake in word
usage.
