I've had all the seeds from one or two crosses rot by the time I plant
them (after drying, soaking, refrigerating) even when all the other
crosses have been ok. Immature seeds invariably rot.
I wonder if some crosses just don't produce viable seeds - they look
normal on the outside, but are dead, and after sitting in moist
conditions in the fridge for 2 or 3 months, they become soft and
squishy.
Also, there have been several crosses where some of the seeds have
rotted, but not all.
Most of my crosses are pretty wide - very rarely two parents from the
same bloodlines or even the same color classes - so maybe I'm getting
some incompatibilities? Or maybe poor seed setting conditions just
results in fewer viable seeds - average around 30 seeds per pod, often
20 or less.
