My experience (in this short-season area) has been that the capsules can be
sucessfully harvested when semi-green. I don't know about really grass
green; I would be skeptical. But I have harvested when they start to get a
dried sort of dingy green, and the seeds were already starting to loosen from
the pod inside. I let them dry some more before opening, anyway. Once the
pod starts to open even a little at the top, I think you're OK. If it's not
starting to do that, I would cut the stalk and pod, and put it in water for
awhile, as previously discussed on this list.
