acres of glass

I need some brainstorming ideas please!
a friend has 3,000 sq metres of state-of-the-art glasshouse on the South coast of Turkey near Antalya.  Underfloor heating pipes, carbon dioxide, fogging/misting systems, automatic ventilation....  Climate zone ? Don't know, but true mediterranean.
He is currently growing aubergines.
What alternatives can you suggest?
He is looking for a crop or production which can fund itself and pay back some of the investment over time.
He also needs an expert to teach his people to understand and use the facility & resource available in the infrastructure.
