Nan, you must be either hungry or hot! Sorry for not sending the recipe yet, but I've got visitors for
the weekend. Here is the recipe, with thanks to Sarah Woodward
Ingredients
125 g blanched almonds, coarsely chopped
3 gloves garlic
1/2 tsp salt
4 slices day-old white bread, crusts removed
250 g seedless white grapes
90 ml extra.virgin olive oil
30 ml white wine vinegar
900 ml iced water
Preparation
Grind the chopped almonds, garlic and salt to a fine paste.
Soak the bread for 5 minutes in a little cold water, then squeeze dry. Add the bread to the almond and
garlic paste, then grind or process again until smooth.
Pour boiling water over the grapes to loosen the skins, then drain and peel them.
Very slowly beat the oil into the almond, garlic and bread paste, followed by the wine vinegar.
Pour in the iced water, check for salt, and place the soup in the refrigerator to chill thoroughly.
Just before serving, garnish the chilled soup with the peeled grapes.
I actually tried it without the grapes and it went down a treat with some sceptical guests I had then
