fig question

I have a young fig (about 3' tall) that I planted into a large pot - maybe 30" x 30" - last spring. Since then, the potting soil has settled way too much. The surface of the soil now sits about 5 or 6" below the rim. (I know it isn't a matter of soil washing out the bottom as I screen all the holes with fiberglass screen - something I highly recommend if you don't already do it).
I could pull the fig up and add soil, but since this is a plant that roots easily from cuttings, can I save myself the labor and just add more soil to the pot? It will cover the trunk, but I am wondering if it will behave like a tomato and simply sprout more roots on the stem.
Any thoughts?One more thing - this probably for folks who live in California. Since the demise of Uncle Malcom's potting mix, I can't find a mix I really like. they all seem to have to much organic matter and I have the ongoing problem of soil over-compacting and over-settling.
Does anyone have a commercial mix they really like? Or a mix that they amend to something they really like?
