Unfortuantely once a Phormium has almost completely
reverted color, you are not going to be able to get it
back. The reverted foliage must be regularly pruned
out to keep unstable color forms from reverting. It
is probably more feasible to select cultivars that are
less likely to revert in the first place. The online
web catalogue for San Marcos Growers nursery in Santa
Barbara has an informative listing of which varieties
are most stable, as well as photos of most of the
varieties they carry.
You could try pruning out all offending foliage, but I
don't imagine that you will be able to get it to
revert back at this late date.
