Persimmons

I'm planning on buying a persimmon tree soon. I like Fuyu. However, Fuyu is
the most common culitvar planted around here and so is the easiest one to
buy the fruit (or be given the fruit by someone who has a Fuyu tree).
Therefore, I'm wondering about other cultivars (especially among the
non-astringent types).
Does anyone have any experience with other cultivars (such as Chocolate,
Giant Fuyu, Izu, Maru, or Nishimura)?
Also, does anyone know how the Japanese dry persimmons?
