We have dried persimmons several times.  We slice them (maybe 1/8 to 1/4 inch 
thick) and use an electric dehydrator.  Whatever causes the astringency in 
unripe Hachiya must be destroyed by this process, as even very firm fruit 
(which is the only kind you can really slice!) comes out tasty. They keep 
their beautiful color and if you slice parallel to the calyx, have a nice 
star shape in the center.
