Wisteria pruning

It's time to prune wisteria (as well as all the other things that need
it) and I need some good advice concerning old overgrown wisteria
plants. There's plenty of information about training and yearly pruning
of younger plants, but I've not seen anything about those old monsters
all twisted around themselves laying in a tangled mass across their
trellis.
Too many gardeners plant a wisteria then just sit back and let it grow
as it will. After about ten years they start wondering what to do. I
don't know what to tell them. I've read that wisteria only blooms on new
wood, on four year old wood and on two year old wood ? ? ?
In our Medit. climate, can one take on an old never pruned plant and
rejuvinate it by pruning. How drastic can this pruning be. Should it be
done in yearly steps or all at once?
