Zones in Italy

Please tell me a way of defining the zone for where I live in the hills (200mtrs) near Panicale in Umbria.

I have 5 acres of hill side behind the house, the hill is south and west facing, currently with olives, rocks and scrub - brambles,figs,broom.

The builders will be finished soon!! What will make the lower teraces into a garden quickly and not be labor intensive in the future.
