French gardens

Hi all
I am considering a trip to Provence in early May - a once in a lifetime opportunity to trade my (boring) 1970s California ranch style home for a 500+ year old roman stone house updated to include DSL and DVD.
So, I am wondering what you all recommend to see and do in France - especially garden wise. I know we have some French members - where are you located and what are the "don't miss" things to see and do?
