Ellen,
Feel free to just cut it off as close to the base of
the stalk as you can, if you don't want to continue
looking at the dead flower stalk.  I use this plant
quite a lot in garden designs, especially for those
where I want something dramatic but don't want to
bother watering.  It will eventually form a trunk that
can make it look almost palm-like with age.
