I want to thank the people who posted replies to my question of what 
to plant under pines.

All the answers have been very helpful - especially to get my 
thinking on a new track. I was thinking of planting Toyon under the 
Monterey pines, so was glad to read of how well they are doing on the 
Monterey peninsula. I'm sure they would look very good here.

But I think I'll plant Pittosporum tenufolium 'Silver Sheen'. It was 
pointed out in a reply that the light green would brighten up a dark 
area, which is an excellent point. 'Silver Sheen' has small, very 
bright leaves and would look great in my location. I usually try to 
plant natives as screen and background plants as they can live with 
winter water only, but the tough Pittosporum will work very well.

Luckily, we don't seem to have a deer problem. We live on the 
ridge-top above a small valley dominated by a dairy. We can see the 
deer browsing below along the creek, but they don't come up here - at 
least not yet. We do have a small bank of wild turkeys that migrate 
through here every morning, and quite an underground city of gophers. 
The gophers should prove to be interesting as we plant more. There 
are hawks and Kites above most of the time, and owls at night. They 
all prey on the gophers as does our cat.
