Commercial bananas are picked green & gas ripened. You just can't beat the
sweetness when they're ripened on the plant.

This may not hold for all bananas but the ones I've seen growing in Los
Angeles and Nicaragua are all picked green and ripened by hanging them up
for a while. If you pick them ripe they have tons of huge seeds. When you
pick them green the seeds are so small you won't even know they're there.
And of course you can cook them green too (best for fried bananas).
