Hi,
The latin for Spanish Thyme is Plectranthus amboinicus cv. when you refer to 
the varigated form.  The green form is just Plectranthus amboinicus.  I sell 
it every year at my herb farm and my customers love it.  I have one lady who 
uses it recipes in place of oregano - she even dries it to use in the winter.
