Pat, your goldfinch/echinops "combination" sounds inspired ;-) Here in Oregon, mine do gets aphids when it is dry.
Is your balloon flower in semi-shade? I have never heard of them getting so tall. Mine are a lovely double white and the other a pure medium purple.

My balloon flowers are thriving, too - although I really don't like
their color. They are a VERY washed out pinkish purple - quite ugly,
actually. But I was under the impression that they remained under 2
feet high. Mine are easily over 5 feet tall and still reaching!
I vote for the Blue Globe thistle (Echinops) in the heat and drought.
Very prolific and quite lovely. A goldfinch sitting on that lovely
blue globe makes them the prettiest thing in the garden!
