Another factor in the deer issue is that they can change their tastes from 
year to year. I have a lot of daylilies here, where I've gardened in the middle 
of the woods for 14 years. This is the first year the deer went after the 
daylilies. I do use homemade rotten-egg mix as a deterrent, and it is effective 
somewhat.

Plant daffodils, lots of them. There are reports of deer eating daffodils as 
well, as they will eat just about anything I guess when they are hungry 
enough, but generally, they avoid daffodils.

I've seen them eating conifers and I'm always amazed when I see deer pruning 
the rugosa roses--those thorns are no deterrent.
