Flowers for cutting garden

I want to add some late summer/autumn flowers to my cutting garden. They
must be in hues of pink, blue, mauve, white, off-white. Most any shade of
those colors would be fine. I have a good spot for them - good sun, good
soil, irrigation, etc. My garden is in Louisville, KY; between zones 5 and
6.
All suggestions will be welcome.
